Blackthorn Cocktail

Irish whiskey, sloe gin, dry vermouth, and bitters — the blackthorn (Prunus spinosa) whose sloe berries make the gin and whose wood makes the shillelagh.

  • ozirish whiskey
  • ¾ ozsloe gin
  • ¾ ozdry vermouth
  • 2 dashesangostura bitters
  • Lemon twistgarnish
Instructions
  1. 1Add all ingredients to a mixing glass with ice.
  2. 2Stir for 30 seconds until well chilled.
  3. 3Strain into a chilled coupe glass.
  4. 4Express lemon twist over the drink and drop in.

The Blackthorn Cocktail is a pre-Prohibition Irish whiskey preparation whose name draws on one of the most symbolically significant plants in Irish culture. Prunus spinosa — the blackthorn — is a spiny deciduous shrub native to Europe, western Asia, and northwestern Africa whose small, dark purple fruits (sloe berries) are harvested after the first autumn frost to make sloe gin, and whose dense, heavy wood is the traditional material for the shillelagh — the Irish walking stick and cudgel whose name derives from the town of Shillelagh in County Wicklow. The blackthorn's association with Irish identity in both the practical (shillelagh) and culinary (sloe gin) dimensions made it a natural emblem for a cocktail built on Ireland's most distinctive spirit. Irish whiskey — distilled primarily from malted and unmalted barley in a tradition documented since at least the 12th century in Ireland — is triple-distilled in pot stills by most traditional producers, producing a characteristically smooth, lighter-bodied spirit that distinguishes it from Scotch's double-distilled and often peated profile. The Blackthorn's formula of Irish whiskey with dry vermouth and a dash of anise liqueur applies the Manhattan's spirit-vermouth-modifier structure to an Irish base, the anise bridging the whiskey's grain character and the vermouth's herbal complexity.
