Blood oranges — a citrus variety whose deep crimson flesh results from high concentrations of anthocyanin pigments that develop during cold nights and warm days — are native to the Mediterranean basin and cultivated primarily in Sicily, Spain, and California. Their season runs from roughly December through April in the Northern Hemisphere, making them a natural ingredient for winter and early spring cocktail menus. The fruit's flavor is distinctly different from standard navel or Valencia oranges: more complex, with notes of raspberry and dark cherry alongside the expected citrus brightness, and a tart, slightly bitter edge that makes it far more interesting as a cocktail ingredient than its common orange relatives. Aquavit's caraway and dill botanicals interact with blood orange's berry-citrus complexity in a complementary rather than neutral way — the earthy spice of caraway provides a backdrop against which the blood orange's sweetness and acidity can fully express themselves. Vikre Distillery, founded in 2013 in Duluth, Minnesota by Emily and Joel Vikre and named for a traditional Norwegian word for creeks and inlets, built their program specifically around botanicals native to the North Shore of Lake Superior, producing aquavit expressions that highlight local plants alongside the traditional Scandinavian caraway. Their promotion of blood orange pairings demonstrated how aquavit's Northern European character extends naturally into Mediterranean citrus territory when the fruit is bold enough to hold its own.
