The Brandy Blazer descends from Jerry Thomas's most theatrical creation — the Blue Blazer — which Thomas performed at New York hotel bars in the 1850s and 1860s and published in his foundational 1862 Bar-Tenders Guide. The Blue Blazer involved igniting Scotch whiskey and pouring the flaming liquid in a long arc between two silver mugs, creating an impressive stream of blue flame in a darkened room. Thomas described it as a great favorite with the Scotch people as an effective remedy for the cold. The Brandy Blazer adapts this showmanship to cognac: the brandy is warmed in a small pan or heavy-bottomed glass, ignited, and the flame burns off a portion of the alcohol while caramelizing the surface sugars, producing a warmer, slightly richer drink with a reduced alcohol bite and a faint char note from the burning. The technique simultaneously heats and modifies the spirit rather than simply warming it, and the brief combustion changes the flavor in subtle but perceptible ways. Thomas's New York performances — at the Metropolitan Hotel, Barnum's Hotel, and other establishments where he worked through his career — established the flaming cocktail as a category of showpiece preparation associated specifically with professional bartending skill. The Brandy Blazer is typically finished with a twist of lemon and orange peel, whose oils interact with the warm cognac to provide the citrus aromatic that balances the brandy's fruit and sweetness.
