History & Origin

The Cantarito is a regional tequila cocktail from the state of Jalisco — the highland Mexican state that is the exclusive heartland of tequila production under the Denominación de Origen Tequila, which restricts production to Jalisco and small portions of four neighboring states. The drink's formula — tequila with fresh-squeezed orange, lime, and grapefruit juices, a pinch of salt, and a grapefruit soda such as Jarritos Toronja or Squirt — combines multiple citrus dimensions to create a layered, deeply refreshing cocktail whose complexity far exceeds its simple construction. The defining element beyond the flavor is the vessel: cantaritos are small, unglazed clay pots — terracotta drinking cups — that have been used for both water and fermented beverages in Mesoamerican cultures for thousands of years, and the clay's slight porosity and mineral content impart a subtle earthiness to the drink that plastic or glass containers do not provide. The salt rim mirrors the salted rim tradition of the Margarita but specifically references the salted clay vessel's mineral quality. The Cantarito has been consumed as a regional specialty in Jalisco's tequila country for generations, served at festivals, markets, and along the highway route connecting Guadalajara to the town of Tequila.
