Instructions

The Garibaldi is named for Giuseppe Garibaldi, the Italian military commander born in 1807 in Nice who became the central figure in the Risorgimento — the 19th-century movement that unified the peninsula's fragmented city-states and kingdoms into the nation of Italy. His volunteer army, known as the Garibaldini or Red Shirts for the scarlet tunics they wore into battle, conducted a series of audacious campaigns culminating in the unification of the north and the Bourbon-controlled south. The drink's two-ingredient simplicity encodes that history: Campari, produced in Milan in the north, and fresh orange juice from Sicily in the south, brought together in a single glass as the two regions were brought together under one flag. The cocktail existed in Italy for decades as a quiet café standard, often listed simply as Campari Orange. Its global renaissance came in 2015 when Naren Young, creative director of Dante bar in New York's Greenwich Village, elevated the drink by introducing fluffy orange juice — freshly pressed and aerated using a high-speed juicer to create a cloud of micro-bubbles that softened the Campari's bitterness and gave the drink a silky, foam-topped texture. When Dante was named World's Best Bar in 2019, the Garibaldi was one of the signature drinks that made the case, and it has since appeared on cocktail menus from Tokyo to Toronto.
