Long Island Iced Tea Punch

The infamous five-spirit cocktail scaled for crowds. Despite containing no tea, this IBA official recipe gets its name from resembling iced tea while delivering a powerful punch of vodka, rum, gin, tequila, and triple sec.

History & Origin

The Long Island Iced Tea is one of the most commercially successful and narratively contested cocktails in American bar history. The most widely documented origin credits Robert Rosebud Butt, a bartender at the Oak Beach Inn in Hampton Bays, New York, who entered the formula in a Triple Sec cocktail competition around 1972. Butt's formula stacked five clear spirits — vodka, rum, gin, tequila, and triple sec — with lemon juice and a cola topper, producing a drink whose color closely resembled iced tea and whose flavor was deceptively mild relative to its actual alcohol content. An alternative origin claim comes from Kingsport, Tennessee, where a local named Old Man Bishop has been credited with developing a similar formula during Prohibition, though this version lacks the IBA documentation and cocktail historian support that the Long Island account carries. The drink's commercial explosion came through the 1980s, when it appeared on menus at fern bar chains and casual dining restaurants across the country, appealing precisely because of its large format, its sweet-sour balance, and the narrative tension between its innocent name and its genuine potency. The punch format scales this architecture directly: five spirits combined in bulk with sour mix and topped with cola or lemon-lime soda in a serving vessel large enough for a crowd — the same deceptive pleasantness operating at party scale, where the dilution of individual pours into a communal bowl temporarily softens the presentation of a genuinely formidable recipe.
