The Negroni has inspired countless spirit swaps since its creation in Florence around 1919. Bartenders in Scandinavia and the United States began substituting aquavit for gin to give the equal-parts classic an earthy, caraway-laced character. Portland bartender Jacob Grier popularized the combination and it has since become one of the most recommended entry points for aquavit cocktails.
