The Nordic Spritz adapts the Italian aperitivo Spritz format — sparkling wine, bitter or aromatic ingredient, soda water — to showcase aquavit as a botanical base spirit rather than as a modifier. The Spritz tradition dates to 19th-century Veneto, where Austrian soldiers during Habsburg occupation diluted local wines with water, and the format was codified into its modern three-part structure as Italian aperitivo brands including Aperol and Campari developed their commercial identities through the 20th century. Aquavit has been produced in Scandinavia since at least the 15th century, with the word derived from the Latin aqua vitae (water of life). The spirit's mandatory botanical is caraway or dill, which gives Norwegian, Swedish, and Danish expressions their defining herbal character. In the Spritz format, aquavit functions differently from the Italian bitter liqueurs typically used: where Aperol brings sweet, bitter citrus and Campari brings clean, assertive bitterness, aquavit contributes spiced grain warmth and dill or caraway herbaceousness — qualities that pair naturally with dry sparkling wine and the restraint of soda water. The Nordic Spritz grew in relevance through the 2010s and early 2020s as craft aquavit production expanded significantly in Norway, Sweden, Denmark, and the United States, with American distilleries in particular promoting the spirit as an aperitivo-style ingredient.
