The Santorini Sunset pays tribute to the most photographed natural spectacle in the Greek islands: the evening light show that occurs nightly at Oia and Fira on the caldera rim of Santorini, where the sun sets behind the volcanic crater into the Aegean Sea, turning the sky through shades of orange, crimson, and deep purple above the iconic white-cube architecture and blue-domed churches. Santorini, known in antiquity as Thera, was shaped by one of the largest volcanic eruptions in recorded human history — the Minoan eruption around 1600 BCE — which collapsed the island's center into the sea and created the caldera around which the modern island is built. Wine production on Santorini is among the most distinctive in the world: the island's primary grape variety, Assyrtiko, is grown in a unique basket-training system called the kouloura that protects the vines from the island's fierce winds while allowing the sea air to circulate through the bunches, contributing saline mineral notes that no other viticultural environment produces. Santorini's volcanic soils and the kouloura viticulture practice were recognized as a UNESCO Intangible Cultural Heritage candidate element. The island's wine tradition stretches back at least 3,500 years, with ancient wine presses discovered during excavations at Akrotiri. The cocktail combines Assyrtiko with honey — connecting to ancient Greek wine customs of sweetening wine with local honey — and fresh citrus, the colors of the grenadine and juice recreating the sunset's gradient in the glass.
