The Scotch & Soda emerged in the mid-19th century when carbonated water became widely available. Bartender Patrick Gavin Duffy claimed to have served one of the first versions around 1894 at his New York café when British actor E.J. Ratcliffe requested Scotch with soda. The drink gained popularity in both Britain and America, becoming a staple serve that lets quality whisky shine. Japan later popularized the whisky highball format, bringing renewed attention to this elegant simplicity.
