The Sherry and Tonic emerged as a low-ABV alternative to the Gin and Tonic, with fino sherry's briny, nutty character proving a natural partner for tonic water's quinine bitterness. The combination gained significant traction in Spain, where fino and manzanilla sherries have long been served as casual afternoon aperitifs, and spread rapidly to the UK and beyond as interest in lower-alcohol drinking options grew in the early 21st century. The Consejo Regulador del Jerez, the governing body of sherry production, actively promoted Sherry and Tonic as a gateway serve to attract younger drinkers to the category from the 2010s onward.
