Instructions

  1. Squeeze spinach in clean towel until completely dry
  2. Mix spinach with feta, cream cheese, garlic, nutmeg, salt, and pepper
  3. Unroll puff pastry onto lightly floured surface
  4. Spread spinach mixture evenly over pastry, leaving 1/2-inch border
  5. Starting from long edge, roll pastry tightly into log
  6. Wrap in plastic and refrigerate at least 30 minutes to firm up
  7. Preheat oven to 400°F and line baking sheets with parchment
  8. Slice log into 1/2-inch rounds
  9. Arrange on baking sheets and brush tops with egg wash
  10. Bake 18-22 minutes until puffed and golden
  11. Serve warm or at room temperature

💡 Pro Tips

Squeezing spinach completely dry is critical - wet spinach makes soggy pastry. The cream cheese helps bind the filling and adds richness. Chilling the log makes clean slicing much easier. Use a sharp serrated knife for cleanest cuts. These can be served warm or at room temperature.

📜 History

These pinwheels draw inspiration from Greek spanakopita, the beloved spinach and feta phyllo pie. The puff pastry adaptation makes them more accessible for home cooks while delivering similar flavors. They became popular at American holiday gatherings in the 1990s as Mediterranean flavors gained mainstream appeal.
