The Ante Cocktail is a Calvados-based aperitif drink whose name references the poker term for a mandatory opening bet — the contribution each player must make before any cards are dealt — positioning the drink as something to be consumed before the main event begins. The cocktail combines Calvados, the apple brandy produced in the Normandy region of France under an appellation of origin that has been formally regulated since 1942, with Cointreau, Dubonnet, and Angostura bitters. Calvados must be distilled from cider made from regulated apple and pear varieties grown in Normandy, with the most prized expressions produced in the Pays d'Auge sub-appellation. Its flavor — apple fruit and brandy character married through barrel aging in French oak — gives it a distinctly Norman identity rooted in the orchard landscapes of northwest France. Dubonnet is a French aromatized wine aperitif produced from a blend of fortified wine and quinine, created in 1846 by Joseph Dubonnet as a means of encouraging French Foreign Legion soldiers in North Africa to consume quinine as a malaria prophylactic. The combination of Calvados's apple warmth, Cointreau's orange brightness, Dubonnet's bitter-sweet complexity, and Angostura's herbal aromatic depth produces an aperitif of genuine complexity suited to the pre-dinner moment the drink's name identifies.
