The Applejack Old Fashioned restores the Old Fashioned framework to an American spirit that predates bourbon's dominance in the cocktail canon — applejack, the apple brandy produced in New Jersey and New England that was among the most widely consumed distilled spirits in Colonial and early republican America. The Old Fashioned's foundational structure — spirit, sugar, bitters, orange peel — dates to at least the 1806 definition of the cocktail itself published in the Balance and Columbian Repository. The Laird family of Scobeyville, New Jersey has documented apple distilling records dating to 1698, and Laird's received its federal distilling license in 1780, making it the oldest licensed distillery in the United States. Robert Laird supplied applejack to George Washington's troops during the Revolutionary War. Before bourbon's mid-19th-century rise to national prominence, apple brandy and rye whiskey were the dominant American distilled spirits, and the Old Fashioned format that emerged from 1860s bar culture would have been prepared as often with applejack as with bourbon. The Applejack Old Fashioned is therefore not a creative substitution but a return to historical normalcy, pairing the Old Fashioned's original sugar-and-bitters architecture with the spirit it might have been served with before Kentucky bourbon consolidated American whiskey's identity.
