The Fancy Brandy is an expression of the Fancy cocktail category established by Jerry Thomas in his foundational 1862 Bar-Tenders Guide — the first significant American bartending manual and the document that codified the cocktail into defined, teachable categories. In Thomas's taxonomy, a Fancy Cocktail was the elevated version of a standard cocktail: the same spirit-sugar-bitters-water formula, but refined with a float of maraschino liqueur or orange curaçao and presented in a more carefully garnished glass. The standard cocktail was a working drink; the Fancy Cocktail was a statement of craft and hospitality. For brandy specifically, the Fancy format was a natural fit: cognac was already the most prestigious spirit in mid-19th-century American bars, and presenting it in the Fancy Cocktail format — with a maraschino or curaçao float visible on the surface of the drink — communicated both the quality of the spirit and the skill of the bartender. Maraschino liqueur, produced by the Luxardo family in the Dalmatian city of Zara (now Zadar, Croatia) since 1821, contributed its characteristic cherry-almond-floral complexity as a subtle aromatic cap. The Fancy Brandy's enduring value is its historical specificity: it is the Old Fashioned format as a mid-19th-century professional bartender would have presented it when showing off, rather than simply serving it.
