Lambrusco is a red wine from Emilia-Romagna and neighbouring Lombardy in northern Italy, made in styles from lightly fizzy frizzante to fully sparkling spumante and from dry secco to sweet dolce, usually at around 8 to 12 percent alcohol. Its deep color and soft foam make it a natural swap for the white sparkling wine in a classic spritz. The version most recipe writers agree on pairs three parts Lambrusco with one part amaro and one part citrus juice: Giada De Laurentiis's Giadzy, The Social Sipper and Everyday Elizabeth use orange juice, while Tyson Davies at Vancouver's Giovane Bacaro uses grapefruit with Amaro Montenegro. The near-black ruby color is why it turns up on Halloween and vampire-party menus.
