The Japanese whisky highball (mizuwari when made with still water, soda-wari when made with sparkling) became one of the defining drinks of Japanese izakaya culture — the informal drinking establishment whose combination of small plates and measured drinking created the template for casual evening socializing that the izakaya represents across Japan. The Suntory whisky highball's commercial revival campaign from 2008 onward is credited with rescuing Japan's domestic whisky sales from a prolonged slump, demonstrating the highball format's commercial power. Sake's specific interaction with soda water produces a different result than whisky highballs: sake's lower alcohol content and more delicate aromatic structure means that carbonation can amplify rather than overwhelm its subtle notes of rice, melon, or floral character depending on the expression used.
