History & Origin

The Whisky Highball is the highball family's original template: a spirit lengthened with sparkling water over plenty of ice. Its roots run to the late nineteenth century, when commercialized carbonated water — a process pioneered by Joseph Priestley in 1767 and turned into a business by Johann Jacob Schweppe in 1783 — met Scotch whisky in British and American bars. Ordered simply as a "Scotch and soda," it was refreshing, easy to reproduce, and quick to spread. The name "highball" took hold in the 1890s; its origin is debated, tied variously to railroad signals or to the tall "high" glass the drink was served in. By 1900, whisky and soda had become a genuine cocktail trend on both sides of the Atlantic. The drink's second life came in Japan. Suntory founder Shinjiro Torii promoted whisky as something to enjoy alongside food, and his Torys bars served highballs to a new generation; the everyday Kakubin blend, released in 1937, was positioned as a whisky made for soda. A nationwide revival in the late 2000s cemented the haiboru as Japan's default whisky serve, refined into an art of chilled glasses, clear ice, and carefully measured pours. The classic ratio ranges from one part whisky to two parts soda for a spirit-forward glass, up to one-to-three or one-to-four for something lighter and longer. The highball's reach is global: in India — the world's largest whisky-consuming market — whisky lengthened with soda or water is likewise the dominant everyday serve. Simple, adaptable, and built around good bubbles and good ice, the Whisky Highball remains whisky's most accessible cocktail.
